1 lb carrots, peeled and cut into 3/4 inch diagonal slices
2 tsps olive oil
1 tbsp ponzu sauce (Mitsukan in best)
1 tsp sesame seeds
1 tbsp chopped green onions
1/2 tsp roasted sesame oil
Instructions
Roast the carrots until just tender but slightly crunchy at 375 degrees for 15 to 18 minutes. In a small bowl, whisk together the remaining ingredients. Toss with the cooked carrots.
