     Whipped Caulifloiwer Puree

Ingredients
3 lbs cauliflower
4 cups heavy cream
6 sprigs thyme
2 bay leaves
salt & pepper to taste
nutmeg 1 pinch or grind
 

Instructions
In a large pot of salted water, blanch cauliflower until very soft. drain well and add heavy cream ( it will be about 50% of volume) along with thyme and bay leaf.
allow cream to reduce by 1/4 and remove thyme and bay leaf. process until very smooth in robot coupe or blender - adjust seasoning and serve
