     Beef - Filet Mignon/Tenderloin by Nadia

Ingredients
fillet mignon - 4 thick pieces
salt - Kosher
pepper - fresh ground
 

Instructions
Pre-heat barbeque on high. Pre-heat oven to 400F. Rinse the fillet mignon in water and pat dry with a paper towel. Put some Kosher salt and then pepper on each piece. Turn over and salt and pepper the other side.
Place the fillet on the barbeque to sear it for 2-3 minutes. After nice grill marks are visible turn over and sear the other side. Place the seared meat into a baking dish with the best side up (nicest grill marks up, generally the first side grilled). Place fillets in oven and cook 10 minutes for medium rare and 15 minutes for medium. Let rest 5 minutes then put on dinner plates and enjoy!
