8 skinless, boneless chicken breast halves, cut into 2 inch pieces
1 (20oz) can pineapple chunks, drained
3 Tbs soy sauce (liquid aminos or organic tamari)
3 Tbs brown sugar
2 Tbs cooking sherry
1 Tbs sesame oil
1/4 tsp ground ginger
1/4 tsp garlic powder

Instructions
In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger and garlic powder. Add the chicken and pineapple and stir until well coated. Cover and marinate at least 2 hours.
Preheat grill to medium heat OR pre heat broiler in oven.
Lightly oil the grill plate. Thread chicken and pineapple alternately onto soaked skewers. Grill 15 to 20 minutes, turning occasionally until juices run clear. If using oven- grill under broiler on broiler pan, turning occasionally.
