Cut the pork into 1 inch cubes and marinate in soda, salt, sugar, pepper and 1/4 cup water for 1-3 hours.
Combine the black beans, oyster sauce, soy sauce, sesame oil, sugar and starch along with white pepper and 1/2 cup water and set aside (this will be the sauce).

Dice the onion, chop the peppers. In a hot saucepan add the oil and add the garlic and ginger and stir fry 5 seconds. Lift out garlic and ginger and discard. Add peppers and onions and cook until tender. Add rice wine to deglaze the pan. When liquid has evaporated, remove veggies to a bowl.
