     Black Bean Pork (or Chicken)

Ingredients
1.5 pound pork tenderloin OR chicken breasts
1 tsp baking soda
1/2 tsp salt
1/2 tsp sugar
1/4 tsp white pepper
3 Tbs fermented black beans, well rinsed (sometimes called salted black beans)
2 Tbs oyster sauce
2 Tbs soy sauce or liquid aminos
2 tsp sesame oil
 
2 tsp sugar
2 tsp potato starch
1/4 tsp white pepper
1 large onion
1 each green and red bell pepper
2 tbs oil
2-4 garlic cloves
2-4 fresh ginger slices
1 tbs chinese rice wine (or gin or sherry)

Instructions
Cut the pork into 1 inch cubes and marinate in soda, salt, sugar, pepper and 1/4 cup water for 1-3 hours. Combine the black beans, oyster sauce, soy sauce, sesame oil, sugar and starch along with white pepper and 1/2 cup water and set aside (this will be the sauce).
Dice the onion, chop the peppers. In a hot saucepan add the oil and add the garlic and ginger and stir fry 5 seconds. Lift out garlic and ginger and discard. Add peppers and onions and cook until tender. Add rice wine to deglaze the pan. When liquid has evaporated, remove veggies to a bowl.
Pat dry pork with a paper towel. Discard the marinade. Return pan to high heat and add remaining oil to the pan. When hot, add pork and fry until brown and opaque (only a couple minutes). Drain in colander.
Return pan to high heat and add cooked vegetables, pork and sauce. Cook until sauce thickens. Garnish with cilantro and serve over rice.
