     Sandwich Sushi Rolls w/Avocado Spread & Cukes

Ingredients
2 slices favorite soft sandwich bread, crusts removed
1 small, ripe avocado
zest and juice from 1/2 small lemon
2T favorite fresh herbs, minced fine
1 tsp. salt
2 large leaves soft lettuce (such as butter, red leaf or other tender leafy greens)
2 persian cucumbers, washed and cut to 12 matchstick slices
 

Instructions
Use rolling pin to flatten bread slices to 1/4 inch thickness.
In small mixing bowl, combine ripe avocado flesh, lemon juice, lemon zest, freshly minced herbs and salt. Mash to creamy, spreadable consistency with fork or puree in mini food processor.
Spread each slice of bread with generous layer of avocado spread to fully cover surface. cut lettuce leaves into strips and place on one end of each slice of bread. Layer cucumber matchsticks over top of lettuce, covering no more than 1/4 of edge of each slice of bread.
Roll up bread slices into tight roll, starting with edge containing fillings. Press tightly, seam side facing down. Slice into rounds to create sandwich sushi rolls.
Serving Suggestions
play with fillings and add grated garlic, scallions or minced jalapeno to avocado spread to boost flavor if desired.
