     Chicken Mango Rice Salad 338.5 calories

Ingredients
1 cup cooked rice 206 cal.
6 ozs. shredded chicken breast 170 g, 256 cal.
1/2 med. mango, chopped 110 g, 65 cal.
1/2 med. cucumber, quartered and sliced 140 g, 23 cal.
1 medium green onion, chopped5 cal.
1 tablespoon chopped basil, 1 cal.
Salt and pepper to taste
Dressing-
Juice from 1 lime, 11 calories
 
1/2 Tablespoon Sesame oil, 68 cal.
1/2 Tablespoon Rice vinegar, 10 cal.
1/2 Tablespoon honey, 32 cal.

Instructions
Add ingredients in a bowl and toss with the dressing.
Note- I bought Costco's vacuumed pack roasted chicken breast meat and sliced mangoes which made this recipe a snap to make. I also used a rice blend of brown, black and Thai red rice. Very colorful and yummy.
Serving Suggestions
This is a versatile recipe. You can serve it over lettuce, put it in a wrap, or pita bread.
