     Enchilada Bowl

Ingredients
2 tbsp olive oil
1 medium onion, chopped
1 lbs boneless, skinless chicken (cut into bite sized pieces)
1/2 tsp salt and pepper
1 cup uncooked rice
2 cups chicken broth
1 can rotel
1 can enchilada sauce
1 cup frozen corn kernels
 
2 tsp chili powder
1 tsp cumin
1 can black beans
1 cup Mexican blend cheese

Instructions
Add oil to skillet and heat on high for 1 minute. Add onion, chicken, salt and pepper. Cook for 5 minutes.
Add rice. Cook/stir for 4-5 minutes. Chicken and rice should get golden brown.
Add chicken broth, rotel, enchilada sauce, corn, chili powder, and cumin. Stir and bring to boil. Reduce to simmer, cover and cook 20 minutes.
Add black beans, top with cheese. Cover and let sit for 5 minutes. Then serve.
