Makes approx 7 jars of 212ml each
Finely shop the first 4 ingredients in a food
processor. Add all the ingredients to a large pot
and bring to the boil. Keep boiling for at least
an hour or till it thickens and looks syrupy.
Towards the end of cooking, blend with a hand
blender for a smoother consistency (optional).
Spoon into hot sterilized jars and quickly close
with sterilized lids. Turn upside down to cool.
