     Marinated chicken breast

Category   Entrees - Maindishes
Sub Category   None
Servings   Serve 3 portions
Preptime   15min-45min marinate
Wine/Beverage
Recommendations
  Red or white wine

Ingredients
626g chicken breast
Juice of 1/2 a lemon
Juice of 1/2 an orange
2 tbspoon original mustard
3 tbspoon honey

Instructions
Fillet the chicken breast, and put them in a dish. Make some slits on top of each one. Put aside. In a small bowl put the honey, orange juice, lemon juice and the mustard, mix well. Pour the mixture on top of each one, especially in the slits. Leave aside to marinate for about 30-45 minutes. Meanwhile peel about 8 medium potatoes and boil them for a little, not too soft, try with a fork. When ready slice them in wedges with chopped garlic, some basil salt and pepper. Sprinkle some olive oil and put them in another dish. Put the marinated chicken on an oven grill rack and put it in a dish cover with foil, brush again with the remaining liquid that left in the dish. The foil is, if some of the marinated liquid will drip, you don't make a mass. Put them in the oven, top and middle shelf for about 1 hr 15 minutes or when you see that the color is golden. You can grill them but I prefer them like that. Serve with the potatoes wedges, mix vegetables and a glass of wine --)
