In medium bowl, mix first 7 ingredients, season
with seasoning. set aside
Heat oil in skillet over medium heat. Season
chicken with Adobo; cook, flipping once, until
lightly browned, about 5 min.
Add reserved sauce mixture to pan; bring to
boil.
Reduce heat to low, Simmer, covered, flipping
chicken once, until cooked through, about 20
min.
Transfer chicken to cutting board; reserve
sauce in pan.
Remove and discard bones and skin. Using 2
forks, shred chicken; stir in pan with sauce.
Cook over medium heat until mixture begins to
caramelize, about 10 min.
Serving
Suggestions
spoon chicken in tortillas. Garnish with desired toppings like chopped tomatoes, shredded lettuce, sour cream and cheese.
