     Cauliflower-twice baked

Ingredients
1 large head of cauliflower
4 oz low fat cream cheese (do not use fat free)
1/2 Cup lite sour cream (do not use fat free)
1/4 Cup minced green onions
1/4 Cup grated parmesan cheese (if it's FINELY grated, use a bit less
6 slices bacon cooked crisp, crumbled
1 Cup 2% milk sharp cheddar cheese
 

Instructions
Preheat oven to 350 deg. Cut cauliflower into pieces. Cook in boiling water until tender, but not too soft (about 15 minutes). Drain well and mash, leaving some chunks.
Mix in cream cheese, sour cream, green onions, parmesan, and 3/4 of the crumbled bacon.
Spread evenly into medium sized glass baking dish. Sprinkle with cheddar and reserved bacon. Bake 30-35 minutes until hot and bubbly.
