     Treacle Tart

Ingredients
Sweet Pastry
300g self-raising flour
100g butter
1 egg
Grated rind of 1/2 a lemon
75g sugar
Few drops vanilla essence
Filling- (Of Maltese treacle rings, mili tal qaghaq ta ghasel)
250g black honey
 
100 g sugar (if you like it sweeter you can add some more sugar)
1 tbspoon cocoa
Grated rind of 1/2 a lemon
Grated rind of 1/2 an orange
2 whole cloves
1 teaspoon Anizette
1/2 teaspoon mixed spice
75g-100g semolina (smid)
72ml water

Instructions
Method- pastry Mix flour and butter together, till bread crumbs. Add sugar and the lemon grated rind. Beat egg and add it to the mixture, add the vanilla. You can add some milk if you need to. Make the dough in a form of a ball and leave to set for 1/2 an hour.
Filling- Make the filling, by mixing all the ingredients except the semolina. Put them in a pan on low heat, till the mixture will come creamy. Bring it to the boil and start adding semolina little by little for 5 minutes reduce heat. Leave it to cool aside. Turn dough on a floured board and roll out pastry. Line a 20cm flan ring with the pastry, bake it blind in a moderately hot oven for 20 min. Put the filling mixture in the flan ring, cut some strips from the pastry and brush them with milk or egg before you add them to the surface. Arrange them on top and bake till you see the strips golden. Bake in moderate oven 190c. After it cools you can put it in fridge in a foil wrapping --)
