Almond Biscotti

Ingredients
-
2 cups all purpose flour
-
1 cup sugar
-
1/2 c slivered almonds, chpped & toasted
-
3/4 teas baking soda
-
1/4 teas. salt
-
1/2 teas. vanilla extract
-
1/4 teas. almond extract
-
2 eggs
-
1 egg white

Vegetable cooking spray

Instructions
Combine first 5 ingrd. in large bowl. Combine vanilla and next 3 ingred. add to flour mixture, stirring until well blended (dough will be dry). Take the dough out onto a lightly foured surface, and knead lightly 7 or 8 times.
Shape dough into two 16 inch long rolls. Place rolls on baking sheet coated with cooking spray, flatten rolls to 1 inch thickness. Bake 350 deg. for 30 minutes. Remove roll from baking sheet, let cool on rack for 10 minutes.
Cut roll diagonally into 30 1/2 in. slices, place cut sides down on baking sheet. Reduce oven to 325, bake 10 minutes. Turn cookies over, bake an additional 10 minutes (cookies will be slightly soft but will harden as they cool).
Remove from baking sheet and cool on rack. Note: to avoid burning the vegetable oil, wipe off the cookie sheet between stages.
