Preheat oven to 425°F. Coat a shallow pan with cooking spray. In a small bowl, combine honey, mustard, salt, pepper and microwave for 30 seconds.
Place special K crumbs in a shallow bowl. Pour half of honey mustard mixture over chicken and then roll each chicken piece in special K crumbs; place in prepared pan. Lightly spray chicken with cooking spray.
Bake until chicken is golden and no longer pink in center, about 15 minutes. Serves 4.
You can use the remaining honey mustard to drizzle on the cooked chicken or use as a dipping sauce, but I thought it was great (and less calories) without it!
*I buy chicken breast tenders that come in 11-13 oz. packages, but you could use a pound of chicken breast too and either serve 5 or re-calculate the NI.
