Roll out pastry thinly,cut in rounds and line
16 patty tins. Mix ground almonds, essence and
sugar with the sufficient beaten eggs to make a
soft mixture. Place a little jam in each case,
then top with a small spoonful almond mixture.
Sprinkle with sugar. Bake in a moderately hot
oven, 200c for about 20-25 minutes. Enjoy --)
