4 tablespoons extra virgin olive oil, divided
4 salmon fillets (6 oz each)
Instructions
For salsa, combine the mangoes, onion, peppers, lime juice, cilantro and salt. Set aside until ready to serve.
Heat a large skillet over medium heat, add 2-3 tablespoons oil. Drizzle the salmon with remaining oil; season with salt and pepper. Place salmon in skillet, skin side up. Increase the heat to med-high; cook for 3-4 minutes. Flip each fillet; cook for 3-4 minutes until the fish flakes easily with a fork.
Transfer salmon to serving dish; serve immediately with salsa.
Halibut or tilapia works great. Fish is also good grilled.
