     Mashed sweet potato

Ingredients
2 x-large or 3 large sweet potato (about 2 cups cooked)
1 tbsp smart balance(or whatever butter you use)
1 tbsp brown sugar
1/3 cup milk 1% or skim
1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
 

Instructions
So SIMPLE....just poke holes in potato using a fork and wrap in wax paper, microwave for 5-6 minutes (depending on size), then flip the potatos and cooked for another 5-6 minutes in microwave. When they are done they will be very soft, take out, unwrap, cut down the middle and let them slightly cool. Next scoop out all of the potato leaving only the skin behind, this is very easy if you cook them long enough! Then just whip everything up in a bowl with hand mixer and voila! you have a great side dish that is really good and VERY point friendly! I know a lot of people know this, but just thought i'd share to give someone an idea, plus i think it is easier doing it the microwave way! Also, i am putting measurements here for spices but i don't really measure them, i just eye ball it, so if you don't like a particular spice just omit and add extra cinnamon!!
