     Hummingbird Cake

Ingredients
3 cups all purpose flour
2 cups sugar
1 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
3 eggs
1 1/4 cups vegetable oil
1 1/2 tsp vanilla
1- 8 oz.can undrained crushed pineapple
 
1 cup chopped pecans
2 cups mashed bananas
Glaze- 1-8 oz. cream cheese, softened
1/2 cup butter, softened
4 cups powdered sugar
1 tsp vanilla

Instructions
Do Not Use a Mixer, stir by hand! Combine flour, sugar, salt, soda and cinnamon. Add eggs and oil stirring until dry ingredients are moistened. Stir in vanilla, pineapple, nuts and bananas. Pour into greased and floured Bundt cake pan and bake at 350 for 30-35 minutes or till cake is done.
Glaze- combine cream cheese and butter and cream until smooth. Add powdered sugar beat till fluffy then add vanilla. Frost cooled cake.
