2 zucchini squash, shave thin lengthwise with a vegetable peeler
2 yellow summer squash, shave thin lengthwise
1 cup fresh basil
1/2 cup hemp seeds
2 Tbl lemon juice
1/2 tsp sea salt
1 tsp Jalapeno pepper
3 cloves garlic
3 Tbl extra virgin olive oil
Slice the zucchini and squash noodles with
vegetable peeler. I recommend the Japanese
Benriner Mandoline Vegetable Slicer (amazon.com).
With this you can make angel hair to fettucine
thick vegetable noodles.
Put noodles in a bowl. Combine all sauce
ingredients in a high speed blender or food
processor and blend until smooth. Pour pesto sauce
over the zucchini pasta and mix well. Enjoy!
