2 cups Minute White Rice uncooked
|
|
1 - 20oz can Dole Pineapple Chunks
|
|
2 Tbsps vege oil
|
|
1 medium green or red bell pepper, chunks
|
|
1 medium onion, chunks
|
|
1/2 mushrooms, sliced
|
|
1 lb boneless chicken, cut 1-in pieces
|
|
1 cup sweet and sour sauce
|
|
2 Tbsp soy sauce, less sodium
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Prepare rice. Drain pineapple,, reserve 2 Tbsp juice. Heat oil over medium skillet. Add peppers, onions, mushrooms; cook until tender crisp. Remove veges, set aside.

Cook chicken in same skillet until browned and cooked through. Add veges back to skillet with sweet and sour sauce, pineapple, and reserved juice.
|

|
Serve with hot cooked rice.
|
