     Marinated Vegetable Salad

1/2 Cup Sugar
1/2 Cup Red Wine Vinegar
1/4 Cup EVOO
1 tsp Salt
8 oz Fresh Green Beans, trimmed and cut into bite size pieces
8 oz Frozen Peas
1/2 Sweet Onion, large dice
1/2 Red Bell Pepper, large dice
2 Ears of Corn, kernals cut off

Bring sugar and vinegar to a boil in a small saucepan. Add the oil and salt. Set aside to cool.
Mix vegetables together. Pour vinegar mixture over the vegetables and toss to coat. Cover and refridgerate for 24 hours.
Note - Any combination of vegetables can be used.
