In a small bowl, mix the cream cheese, sugar, flour, lemon zest, lemon juice and vanilla until well blended and smooth
Preheat the oven to 350 degrees—Spray a baking sheet lightly with cooking spray
Unroll the crescent dough and separate into 4 rectangles—Place on a lightly floured work surface and cut each rectangle crosswise into 2 squares (pinch seams together and stretch 2 opposite corners of each square gently to make the flaps that will enclose the filling)--Place on the baking sheet
Spoon 1 tbsp of the cheese mixture diagonally on the center of each square, at a right angle to the stretched corners—Top with 1 tbsp of the pie filling
Fold the flaps across the center, overlapping
Lightly beat the egg beaters and water—Brush over the tops of the danish
Bake for 15 minutes or until golden brown—Remove to a wire rack to cool
