     Cinnamon Apple Cake

Ingredients
1 3/4 Cup Sugar (Divided)
3/4 Cup (6 oz) Softened Cream Cheese
1/2 Cup Softened Butter
1 tsp Vanilla
2 Large Eggs
1 1/2 Cup AP Flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
2 tsp Cinnamon
 
3 Cups Peeled and Chopped Rome Apples (2)

Instructions
Preheat oven to 350 degrees.
Beat 1 1/2 cup sugar, cream cheese, butter and vanilla at medium speed until well blended. About 4 minutes. Add eggs, 1 at a time, beating well after each egg. Combine flour, baking powder and salt in a small bowl. Add flour mixture to sugar mixture and beat at low speed until blended.
Combine 1/4 cup sugar and cinnamon in a small bowl. Combine 2 Tbls of the cinnamon mixture with the apples. Fold the apples into the batter.
Pour batter into an 8 inch spring form pan coated with cooking spray. Sprinkle remaining cinnamon mixture on top. Bake for 1 hour and 15 minutes or until cake pulls away from pan. Cool completely. If using a 9 inch pan, reduce cook time by 5 minutes.
