     Carrot-Coconut Muffins

Ingredients
1/2 C AP flour; 1/2 C whole wheat flour
1/4 C brown sugar
1/4 tsp baking soda; 1/2 tsp baking powder
1/4 tsp salt
cinnamon
1/4 C vegetable oil (not full)
1/4 C milk (not full)
1 egg
2 Tbsp honey
 
dash vanilla
1/2 C shredded carrot, 1/2 C coconut
1/3 C shredded apple

Instructions
Preheat oven to 350. Line/grease about 10 muffin tins, or lots of mini-muffin tins.
In a large bowl, whisk together flours, brown sugar, baking soda and powder, salt, spices. In a small bowl, mix vegetable oil, milk, egg, honey, and vanilla.
Add wet into dry, stir until just combined, then add carrots, coconut, and apple.
Bake 16-20 minutes, or until dry.
