Sweet potatoes or yams, cut into bite-sized pieces
Onion, cut into chunks
Carrots, cut
Red pepper, cut
dried apricots, cut
Butternut squash, cut- optional
cinnamon
cumin
salt
olive oil
brown sugar
Instructions
Cut veggies, and toss with cinnamon, cumin, salt, and olive oil. Put in oven (350F) and roast, covered, for 45 minutes, then roast uncovered for at least 15 minutes until crispy.
Rub/sprinkle/mix cinnamon, cumin, salt, pepper, brown sugar, and olive oil (if needed) on chicken. Either roast (probably best separate from veggies) or saute.
Combine and serve!
