     Grilled Shrimp with Vietnamese Vinaigrette

Ingredients
1/4 Cup Lime Juice plus Wedges for Serving
1/8 Cup Light Brown Sugar
2 Scallions, sliced
1 Large Shallot, finely chopped
1 Jalapeno, seeded and minced
1 Tbls plus 1 tsp Fish Sauce
1 Large Garlic Clove, minced
1/4 Cup Toasted Sesame Oil
2 tsps Grapeseed Oil
 
16 Extra Large Shrimp, peeled and deveined - 1 Lb
Ground Pepper

Instructions
In a medium bowl, whisk together the lime juice, brown sugar, scallions, shallots, jalapeno, fish sauce, garlic and sesame oil.
Preheat grill to high. Transfer 1/4 cup of the vinaigrette to a large bowl. Whisk in the grapeseed oil. Add the shrimp, season with pepper and toss to coat. Grill the shrimp, flipping halfway through until just cooked through, 2 to 3 minutes per side.
Transfer the shrimp to a platter and drizzle with the remaining vinaigrette. Serve with lime wedges.
