     Italian Sausage Tortellini Soup

Ingredients
2 cans diced tomatoes
1 lb Italian sausage
1 c chopped onions
1 c sliced carrots
1 c diced peppers
1 c sliced muhrooms
1/2 c chopped zucchini
8 oz fresh tortellini
2 cloves garlicc minced
 
5 c beef broth
1/2 red wine only use if too tomatoey
1 ccan v8 juice
basil, oregano, italian ect
cajun, chili powder ect
3 stalks of celery
Use other veggies of your choice

Instructions
Remove sausage from casing and roll into small meat balls. Brown sausage balls in frying pan and discard grease. Saute onions and garlic. Add everything except the tortellini and zucchini.
Slow cook method- Cook on low for 4 hours on stove top or in a crock pot. Or bake it in oven for 4 hours at 200 to 250 degrees. Add zucchini at last 45 min or so.
Fast cook method- Bring to a boil and reduce heat to simmer for 30 min. Add zucchini. Simmer 30 min more.
Cook tortellini in boiling water according to pkg directions. Add to soup 10 min before serving so the tortellini does not get a chance to suck up all the juice. This is a great soup. When I made it threw in frozen green beans and some left over brussel sprouts and a can of kidney beans. Used a rice past to make it phase 1 even tried some with barley and wild rice yum-o
