|
combine all brine ingredients in a tall pot to
cover turkey. allow to soak at least overnight in
fridge.

|
remove turkey from water and discard brine.
rinse and pat turkey dry.
rub all over with olive oil, paprika and garlic
powder.

|
place in large pan on a bed of onions.
stuff with cut up citrus fruits like oranges and
lemons. put more herbs and garlic on top of and
around turkey. cover tightly.

|
|
cook at 350 turning over after an hour and 1/2.
cook for another hour and then let brown uncovered
on both sides.
