     Homemade candied peel (Confettura Tac-Citru).

Ingredients
3 large oranges
1 large lemon
3 cups water
1 cup sugar
 

Instructions
Peel oranges and lemon or (lemons). Remove the white pith. Put them in a bowl of water for 2 days, and every now and then, drain water, and make fresh water again. After 2 days put them in a pan with water and bring it to the boil. Leave to simmer for 30 minutes. Drain the hot water again, add 3 cups of fresh water or till the surface of the orange and lemon peel. Add 1 cup sugar. Bring to the boil and again reduce heat, and let it simmer for 1 hour, until peel is very soft and transparent. Don't leave the pan alone. Drain well with a sieve the oranges and lemon peel. Leave them for a while aside to dry a little. Toss them in a lot of sugar and put them in a sterilized jars. Close lid well and put them in fridge. If you have juice left, you can reserve the juice for wetting the sponges for trifles. Let the juice to cool and put it in a jar in fridge --)
