     Orange-scented Rack of Lamb

Ingredients
Marinade-
2 tbl freshly grated orange zest
1/2 c orange juice
3 tbl honey
3 tbl soy sauce
2 tbl asian sesame oil
1 tbl minced garlic
1 tbl ginger
 
Rack of lamb (8 chops about 2 1/2 lbs, bones frenched)
4 scallions, thinly sliced for garnish
4 sprigs thyme, for garnish

Instructions
Preheat the oven to 400. Combine marinade ingredients in bowl. Cut the lamb rack in half so you have 2 4-chop racks. Place lamb in marinade and coat well. Cover and refrigerate overnight turning once or twice. Remove from refrigerator 30 minutes before baking. Place lamb curved side up in a shallow roasting pan. Season with salt and pepper. Pour half of the marinade over lamb, then cook to medium rare (20 min) until an instant read thermometer registers 135-140. Remove lamb to carving board and rest for 10 min. Slice racks into chops and garnish with scallions and thyme.
