     Veal with Wine

Ingredients
2 lbs thinly cut veal for scallopini (cutlets)
salt and pepper
1 green pepper, cut into 1 inch pieces
1 large onion, chopped
1/2 lb fresh mushrooms, sliced
1 to 1 1/2 c burgundy wine
1/2 c parmesan cheese
 

Instructions
Brown veal(which has been floured lightly) in shortening just until meat loses pinkness. Remove veal from the skillet to a casserole dish. To the drippings in the skillet, add green pepper, onions and mushrooms. Also add 1 c water and wine. Cook for a few minutes until you have loosened the drippings and immediately pour over veal in casserole. Sprinkle cheese on top (Opt) Bake at 325 for 1 - 1 1/2 hours. Serve over rice.
