1 Large Spaghetti Squash, halved lengthwise and seeded
¼ cup Toasted Pine Nuts
¼ cup grated Pecorino Romano cheese
2 T chopped fresh Sage (could use other herb if you prefer)
2 T melted butter
Salt and Pepper to taste
Instructions
Preheat oven to 350.
Place prepared squash cut side down on lightly greased large
baking pan.
Bake squash in preheated oven for for 50 minutes
Scrape the flesh from the rind with a fork and place in a
bowl. Add the browned pine nuts , cheese , sage, butter,
salt and pepper. Toss to combine.
Serve immediately.
