Cream butter and sugar in a bowl, till light
and fluffy. Beat in egg, add the cooked
pumpkin, vanilla essence, baking soda, baking
powder, ground nutmeg, ground cinnamon and
salt. Add little by little the flour, mix all
the ingredients together. When ready, place
mixture into greased muffin tins. Put a
spoonful of the mixture in each muffin tin,
don't put too much so they will come a little
low. Bake on gas mark 180c for 20 minutes or
until they are ready. Check with a small kebab
wooden stick. Leave to cool. Meanwhile melt the
butter in a small pan. Mix the icing sugar,
milk, vanilla essence and the nutmeg. Add the
melted butter and beat until creamy. Use
immediately. Decorate the muffin and put some
of the chocolate scales for the eyes, nose and
mouth. Children love it -)
