     RDBE Smokey Cabbage

Ingredients
1 Head cabbage cleaned and cut in quarters.
1 choice of meats
1 choice of cheeses
1 garlic powder
1 sage powder
1 ground pepper
1 thyme
1 oregano
1 olive oil
 
1 salt to taste

Instructions
Par boil cabbage quarters to 60% cooked. Drain and cool. Apply olive oil liberally to cabbage and place on a hot grill. Turn often and allow some charring then remove. Place quarters in a foil lined pan. Lift and separate leaves and add seasonings along with meats and cheeses. Cover tightly and bake at 325 for 20-30 minutes.
NOTE- As for the meats..I often precook a mixture of 50/50 lean burger and sausage with chopped onions and garlic well drained. However sliced meats such as salami, ham, taso can work well. As for cheeses, I prefer smoky gouda. Feta, sharp cheddar and swiss work quite well. DONOT remove the cabbage core..it is needed to hold the leaves together.

Serve hot.
