     Momma Mia Meatballs

Ingredients
1 lb. ground chuck
1 lb. ground veal
1 lb ground pork
fresh parsley
minced garlic or garlic powder
Parmesan or mixed hard Italian cheese finely grated
'Bout a cup of cheese
salt and pepper to taste
about 1 loaf or less to start of stale Italian bread (hard bread)
 
4 eggs
I don't buy veal..if you don't...just use the pork and the beef.

Instructions
Take the hard bread and soak in either milk or chicken broth. I like the chicken broth better. Then drain it well by squeezing in a strainer and get the moisture out. Mix all ingredients together. Mix well. Roll meatballs and fry in a pan with a little pork salt. You can add that to your sauce at about the last hour mark. Or eat just like they are. Mmmmmmmmmmmmmmmmm
The meatballs should be wetish but no too wet not too dry ....You want them moist. When frying two spoons is best to turn so as not to break them....Mangia and salute :O)))
