     Zucchini Quiche

Ingredients
8 eggs
1/4 c milk
1/4 c grated parmesan cheese
1/4 tsp salt
3/4 tsp pepper
1 tbl butter or margarine
1/4 c wheat germ
1/2 c shredded swiss cheese
1/4 c chopped green onion (tops too)
 
2 small zucchini (1/2 lb) coarsley shredded (unpealed)
1 c shredded jack cheese

Instructions
In a large bowl, beat eggs and milk together. Add salt, pepper and parmesan cheese. Stir and set aside. Generously spread the butter over the bottom and sides of a 9 inch pie pan. Sprinkle wheat germ evenly over the bottom of the pan. Top with a layer of swiss cheese, then onion, then zucchini. Sprinkle with jack cheese and pour egg mix over all. Bake uncovered at 350 for 25-30 minutes or until center is set when lightly touched. Remove and place on wire rack to cool. Serve at room temp. or chilled.
