     Soup - Zuppa Toscana

Ingredients
1 lb ground sausage (spicy if you like)
1 white onion, diced
4 slices fried, chopped bacon
3 cloves garlic, crushed
8 cups water
1 cup heavy cream
5 cubes chicken bouillon
3 large potatoes, peeled and cubed
2 cups fresh kale, chopped
 

Instructions
Saute sausage until cooked through. Drain the grease and remove sausage. In the same pot, saute bacon until halfway cooked, then add onions and garlic and continue to cook on LOW heat until bacon is cooked and onions and garlic are soft.
Add some water to deglaze pot, then add the rest of water and bouillon and turn up heat to boiling. Toss cubed potatoes in, cook over medium heat until potatoes are cooked. Takes about a half-hour.
Stir in the cream. Add sausage and kale, cooking until everything is heated through.
Serve with bread or dinner rolls.
