     Cashew Nut Cookies

Ingredients
100g butter
100g demerara sugar
1 egg, beaten
175g self-raising flour (I have used wholemeal self-raising flour)
75g chopped cashew nuts (you can make it with other nuts, you like)
 

Instructions
Cream butter and sugar. Beat in the egg gradually, stir in the flour and chopped nuts. If the mixture is too sticky, add some more flour. Shape into a long roll, wrap in aluminum foil. Put it in the fridge, for several hours. Grease a baking tin, cut the roll into thin pieces. Place the biscuits widely spaced on the tray. Bake for 12-15 minutes, middle shelf, at gas mark 200c or until golden brown. Enjoy -)
