In a saucepan, combine sweetened coconut milk, ginger cinnamon,
and star anise. Bring to a boil, then reduce heat and simmer until
the mixture is reduced to 1/2 c, about 10 minutes.
In a large bowl, stir the unsweetened coconut milk until smooth.
Slowly add the chia seeds, stirring to combine. Strain the spiced
coconut milk into the bowl, discarding the spices. Stir in the raisins
and the sugar.
Refrigerate, covered, for at least 4 hours (stir vigorously after the
first hour to prevent the seeds from clumping).

Spoon into glasses and top with fruit, cinnamon, or coconut, if desired.
