     Honey Oat Biscuits

Ingredients
1/2 cup brown sugar (75 g carb)
1 cup SR flour (101 g carb)
1 cup coconut
1 cup rolled oats (55 g carb)
¼ cup choc chips (60g choc chips = 30 g carb)
¼ cup dried fruit/nuts/sunflower seeds (¼ cup apricots = 13g carb. sunflower seeds = carb free)
Grated lemon zest
125g butter
2 tablespoons honey (46 carb)
 
2 tablespoons water
Pinch bicarb soda

Instructions
1. Collect equipment 2. Collect dry ingredients-place in large bowl
3. Place butter in microwave jug – cover with plastic lid - melt 30 seconds 4. Add water, honey and bicarb
5. Add mixture to dry ingredients 6. Shape as biscuits or press into a lined slab tin.
7. Bake in moderate oven until light golden
