Ingredients
¼ cup Brown sugar (53g carb)
1 cup SR flour (spelt) (white wheat flour , 1 cup = 101g carb)
¼ cup crushed hazelnuts (14 g carb)
1/3 cup fruit (1/3 cup blueberries or strawberries= (5g carb)
1 egg - beat with fork
2 tablespoons of apple puree
150mls pineapple juice or milk (9g carb)
makes 6 muffins = 30g carb each = 2 exchanges
 

Instructions
Add wet ingredients to dry ingredients in the bowl. Mix 20 times (no more) with a large metal spoon.
HALF Fill into muffin tins (using 2 spoons) then add caramel (do not add if counting carbs) then top with batter
and bake at 200C for 10-15 minutes You could use a silicone muffin tin or a coffee cup if muffin tin is not available
Serving Suggestions
I Personalized the nuts and fruit etc on these muffins, if you wish you could do the same
