4 sliced green onions or 1/4 cup thinly sliced red onion
1 can mandarin oranges, drained
1/2 cup toasted sliced or slivered almonds
1/2 cup crunchy chow mein noodles
Instructions
Mix first 6 ingredients to make dressing. Shake well.
Mix greens, oranges, celery, and onions in a salad bowl. Toss with enough dressing to
coat the salad. Either add almonds and noodles at the last minute and toss before
serving or plate the dressed salad and sprinkle the almonds and crispy noodles on top
of each serving to maintain the crunch.
Variations- Substitute for the mandarin oranges- 1 cup grapefruit sections and 1 diced
avocado, plus 2 tablespoons chopped cilantro. Or 1 cup fresh raspberries or sliced
strawberries. You can also add 1 1/2 cups of diced cooked chicken or 1 cup of cooked
salad shrimp for protein to make a one course luncheon salad.
