100gms each of plain flour, sugar, candied peel and almonds (skin on). 50gms of cherries (halved). half a teaspoon each of black pepper, cinnamon and mixed spice. 1 large egg, a teaspoon of vanilla essence and 3 tablespoons of runny honey (heated in bain marie or microwave).
Mix all the dry ingredients to remove any clumps of candied peel. Make a well and add the wet ingredients. kind of kneed with a spoon...the result is a very stick dough. line a 6in tin with rice paper and spread mixture as much as possible. bake at 225 for about 30 mins.
