      Baked Beans 2014 Martha Stewart's

1 lb dried navy ean
1/4 cup veg oil
4 stips bacon
1 med onion diced
2 cloves minced
1/3 c cider vinegar
1/2 c barbarque sauce or ketchup
1/2 c br sugar.( I have cut to 1/2 T)
2 T Dijon mustard
1 tsp coarse salt ( i do not use)
1/4 tsp hot sauce
2 1/2 c water
salt & pepper

Rinse and drain navy beans. Cover with water in a lg pot and bring to a boil. Remove from heat and cover with lid for 1 1/2 hour.
Heat a lg Dutch oven over med high heat and add veg oil. Add bacon onion and garlic. Cook stirring until onion are soft 8 to 10 min. Reduce heat to med if onion tart to brown.
Raise heat to high and add vinegar and let simmer until slightly reduced about one min. Stir in BBQ sauce br sugar Dijon salt if using and hot sauce.
Drain beans and add to onion mixture. Stir in water and bring to a boil. Cover and reduce heat to a simmer. Cook stirring occasionally until beans are tender about 2 1/2 hours. Season with alt and pepper if desired. May also be done in crock pot or oven but cooking times and liquid may need adjusting. We really like this recipe but are still trying to reduce the sugar a seems too sweet. Will change to a different type of BBQ sauce and see if this helps.
