The chocolate, wafers and coconut truffles, are ideal for parties or if you like something delicious after a meal! Crush wafers in a mixer, add the soft cheese, icing sugar, 4 tblspoon coconut and the vanilla essence. Mix to a soft paste. Line a baking tin with a baking sheet. Take a spoon from the paste and roll it in the palm of your hand to form a small ball. Put it in the lined dish. Complete this method till you finish all the paste. When ready, put them at least 1 hour in the fridge to get firm. After melt the chocolate bain- marie. Put aside a small bowl with coconuts. Take two forks and roll each truffle in the melted chocolate, then roll them in the coconuts. Put them each in a small paper case, till you make them all. Put them again in fridge so the chocolate will get firm. Taste so good! Enjoy --)
