     Pumpkin Spice Overnight Oats

Ingredients
1/2 cup unsweetened coconut milk
1/2 cup rolled (old fashioned) oats
2 tbsp pumpkin puree
1/4 tsp pumpkin pie spice
1/4 tsp vanilla extract
1 tsp ground flaxseed
2 tsp pure maple syrup
1 tbsp chopped walnuts (or other nut)
 

Instructions
In a pint size mason jar, combine coconut milk, rolled oats, pumpkin puree, pumpkin pie spice, vanilla, flaxseed, and maple syrup. Mix until completely combined.
Put lid on and store in refrigerator for 8 hours or overnight.
Stir and add a little more coconut milk for consistency. Add walnuts and enjoy.
