     Aunt Jeannie's Perfect Pancakes

3 cups all purpose flour
2 tbs. baking powder
2 tsp. salt
2 tbs. sugar
2 eggs
1/4 cup coconut oil
2 tsp. vanilla
1 cup milk -
Options- Pecans, Cinnamon, Berries... etc.

Add all the dry ingredients together in a large mixing bowl. Blend well with a wire wisk. In a separate bowl, blend wet ingredients. Slowly while stirring, add wet ingredients to dry ingredients, blend well. Gradually add more milk as needed to establish batter consistency. Spoon onto HOT oiled griddle or frying pan. (I use a ladle.) Covering with a lid helps the pancake to rise to a light & fluffy texture. Flip the pancake when the edges bubble... approximately 2-3 minutes for a large pancake. Adjust the heat according to the color. Should be a golden brown. Too dark & doughy in the middle?... Turn the heat down.
Serving Suggestions
Serve with butter & maple syrup for breakfast or as dinner cakes with soup.
