Preheat oven to 375.
Combine the egg yolks, condensed milk and vanilla.
Cook in double boiler over simmering water,
whisking continuously 10-15 minutes. Remove from
heat and whisk in the butter and set aside.

Line a swiss roll pan with foil and
grease with the melted butter making sure to get
into the corners.

Using an electric mixer whisk the egg whites,
vanilla and cream of tartar until soft peaks form.
Gradually add the sugar and whisk until firm ,
glossy peaks form.

oon the mixture into the pan and spread evenly
with a palette knife. Bake for 1 to 15 minutes
or until the meringue starts to lightly brown
on top. Carefully remove the meringue from the
try by lifting the foil and turning it onto
another piece of foil. Spread the yolk mixture
evenly over the meringue leaving a small border
around the edges.Roll jelly roll style. Top
either with a drizzle of custard and/or
powdered sugar
