     Peppermint Meltaways cookies

Ingredients
1 cup butter, softened
1/2 cup confectioners sugar
1 1/4 cups all purpose flour
1/2 cup cornstarch
1/2 tsp peppermint extract
Frosting-
2 Tbs butter, softened
1 1/2 cups confectioners sugar
 
2 Tbs 2% milk
1/4 tsp peppermint extract
2 to 3 drops red food coloring, optional
1/2 cup crushed peppermint candies

Instructions
Preheat oven to 350 degreees. In a small bowl, cream butter and confectioners sugar until light and fluffy. Beat in extract. Combine flour and cornstarch; gradually add to creamed mixture and mix well
Shape into 1 inch balls. Place 2 inches apart on undressed baking sheets. Bake 10 - 12 minutes or until bottoms are lightly browned. Remove to wire racks to cool.
In a small bowl, beat butter until fluffy. Add confectioners sugar, milk, extract and food coloring; beat until smooth.
Spread over cooled cookies; sprinkle with crushed candies.
